  • 1 cup of sugar
  • 3 table spoons cornstarch

Preparation

  • Cream the butter, sugar and salt until it's light and fluffy for 5-7 minutes
  • Beat it in egg and vanilla extract, then gradually flour
  • Divide the dough in half and shape each into a 1 inch thick rectangle
  • Wrap up and refrigerate this for 2 hours (or if you would like, overnight)

Method

  • Preheat the oven to 375 degrees and place the blueberries and separate natural ingredients if you don't want to use the filling, in a saucepan
  • Boil it over medium heat while frequently stirring until it has thickened -for 2 minutes
  • Slightly let it cool
  • Roll each portion of dough between 2 sheets of waxed paper into a 14 by 10 inch rectangle
  • Place 1 rectangle in a greased metal pan and press it in to about 1/2 inches up the side
  • Add the filling
  • Cut the remaining rectangle into 1/2 inch strips before freezing them for 5-10 minutes to make sure it's firm
  • Arrange the strips over the filling in a crisscross style - the edges can be pressed with a fork
  • Bake until the top crust is golden-brown in colour, for 35 minutes
  • Let it cool, preferably on a wire rack, before cutting into bars
