Last month, I found myself digging into a soft brioche doused in sweet whipped cream and drizzled with fresh cherries and sauce at Okra Test Kitchen. It was a sensational sweetness of cherries and compote without being too overpowering and the bread was a cloud of softness with a crisp crust to add to the texture.
I decided to attempt making it at home & I have to warn you, it’s easy to make and addictive to eat! (Wear loose pants, I know I had to!)
Ingredients:
200 g Ricotta Cheese
150 g Mascarpone Cheese
250 g Mixed Berries
2 slices Brioche (sliced)
1 Lemon
100g Sugar
2 tbsp Butter
Directions:
Step 1:
Zest your lemon and add it to a bowl of the mascarpone cream, the ricotta and 50g of sugar and whisk till it is light and fluffy. Refrigerate till you reach step 3!
Step 2:
In a saucepan over medium heat, add your berries and the remainder of sugar along with 1 tablespoon of water with a dash of lemon juice and cook until the berries soften and the juice thickens to a nice coulis.
Step 3:
Heat butter in a pan over medium-low heat. Add a slice of brioche and fry on each side until golden brown, approx 2 min. Repeat for the next slice. Once ready to eat, spread a generous layer of the whipped creamed mixture onto the brioche slice and top with the berries into the center!
Serve immediately, and enjoy!
(Note: if you find it difficult to find mascarpone cream and ricotta, fear not. I made an alternative version where I substituted the ingredients with any cream cheese and Milk Pak cream.)
