During this period of social-distance in quarantine and spending it inside at home, there are many ways to stay occupied, including cooking and baking! If you have an inkling for seafood, a recipe for homemade garlic shrimp pasta is not only super fun and productive but also tasty and rewarding, you can try it yourself!
Ingredients and Preparation
400 grams of penne or fettucine pasta (for a serving of 4)
1½ tablespoons of olive oil
1 pound of shrimp (peeled and deveined)
Salt and ground pepper (for taste)
6 cloves of garlic (minced)
¼ teaspoon of red pepper/chilli flakes
3 tablespoons of lemon juice
1 tablespoon of green olives
1½ teaspoons of cold butter
1/3 cup of chopped up parsley (hara-dhania)
1½ tablespoons of cold butter
Water (as needed)
Canned red sauce (for the pasta)
Further Preparation:
Boil the pasta separately according to instructions on the package and start preparing the other ingredients separately as follows...
Method:
Heat the olive oil in a heavy skillet/pan over high heat enough till it begins to smoke (different temperature for everybody)
Place the shrimp evenly in a layer at the bottom, cook it for 1 minute on a low flame without stirring
Season the shrimp with salt and or ground pepper, cook and stir until the shrimp starts to turn pink for around 1-1½ minutes
Cook and stir it in garlic, add red pepper flakes, stir it for 1 minute or so and add lemon juice, green olives, 1½ teaspoon cold butter and half of the hara-dhania (coriander)/parsley
Cook until the butter melts for 1 minute and then turn the heat low, stirring in 1½ tablespoons of cold butter.
Cook and stir until the better melts to form a thick sauce and the shrimp is pink, for 3 minutes
Remove the shrimp, transfer into a bowl
Continue to cook the butter sauce, adding water (1 teaspoon) at a time if it gets too thick - do this for approximately 2 minutes
Season the mixture with salt
Add 2 cups of pasta sauce (red canned) to the shrimp and mix the concoction together with the pasta, adding more herbs of your choice to the top of the combined mixture
And…viola!
