If you're a fan of blueberries then you have to try out these scrumptious blueberry lattice bars! With 55 minutes, not including refrigerating the dough, you have yourself some delectable blueberry bars!
For an easy dessert or some prime time comfort food, this recipe is just what you need, with enough to make a dozen. Let's get baking!
Ingredients
1-1/3 cups of softened butter
2/3 cups of sugar
1/4 teaspoon salt
1 large egg, room temperature
1/2 teaspoon vanilla extract
3-3/4 cups of all purpose flour
For the Filling
Blueberry pie filling is available at Paradise or Agha's or if you want to try the natural way, you need:
3 cups of fresh or frozen blueberries
1 cup of sugar
3 table spoons cornstarch
Preparation
Cream the butter, sugar and salt until it's light and fluffy for 5-7 minutes
Beat it in egg and vanilla extract, then gradually flour
Divide the dough in half and shape each into a 1 inch thick rectangle
Wrap up and refrigerate this for 2 hours (or if you would like, overnight)
Method
Preheat the oven to 375 degrees and place the blueberries and separate natural ingredients if you don't want to use the filling, in a saucepan
Boil it over medium heat while frequently stirring until it has thickened -for 2 minutes
Slightly let it cool
Roll each portion of dough between 2 sheets of waxed paper into a 14 by 10 inch rectangle
Place 1 rectangle in a greased metal pan and press it in to about 1/2 inches up the side
Add the filling
Cut the remaining rectangle into 1/2 inch strips before freezing them for 5-10 minutes to make sure it's firm
Arrange the strips over the filling in a crisscross style - the edges can be pressed with a fork
Bake until the top crust is golden-brown in colour, for 35 minutes
Let it cool, preferably on a wire rack, before cutting into bars
